The scene in Sorbet with Hannibal’s ‘therapist’ was really fishy to me (all quotes approximate because I don’t have a perfect memory nor a transcript in front of me). When they were together in her office, she seemed privy to far more than she should have been, calling out Hannibal’s thinly veiled monstrous nature (‘person suit’) and so on. When they were discussing what type of wine to drink, the dialogue was suspiciously agreeable (‘I was thinking pink, don’t you?’). The scene change to Hannibal’s office was suspiciously abrupt. But most noticeably, why does Hannibal have the same glass of wine in his office as he had in hers? And he speaks to Will as though the meeting he mentioned had been in his own office.
I believe that she is actually just a fragment of Hannibal’s personality, and Hannibal was really just drinking wine alone and speaking with himself. It doesn’t necessarily fit with Hannibal’s canonical pathologies (considering Tomas Harris’ works as the true canon, excluding Hannibal Rising because it’s widely regarded as non-canon), but it might fit in with the twist that the show is putting on the whole story. It’s just a theory, but it makes sense to me.
EDIT: Another piece of evidence that might actually be stronger than the others: the use of lighting and color in the scene in ‘her’ office is extremely suggestive. She is positioned in full light, surrounded by white walls and windows with white curtains, and exibiting vibrant colors in both her clothes and her face; whereas Hannibal is cast entirely in shadow and is very ashen. I believe she may not just be ANY fragment of his personality, but rather the most HUMAN fragment of his personality left. The composition and cinematography of the whole show is so flawless that I don’t think this could possibly mean nothing, at the very least.
I think we all need to go out into an empty field and just scream for about an hour.
